Ingredients for 10 people:

100 ml of milk
2 eggs
220 g of flour
50 ml of oil
1 apple cut into slices
50 g of stevia sweetener (or 100 g of sugar)
1 tsp of vanilla
1 tsp of baking powder
A pinch of salt


For the cream – apple and cream cake: 25 ml of milk 25 g of stevia sweetener (or 50 g of sugar) 15 g of cornstarch 10 g of vanilla sugar 1 egg


Preparation:

First, make the cream: in a saucepan, mix the egg with the stevia sweetener (or sugar), vanilla sugar, cornstarch and milk using a whisk

Bring the mixture to the boil while whisking until the cream thickens

Cover the surface of the cream with cling film and let it cool to room temperature

In a bowl, beat the eggs with the stevia sweetener (or sugar), salt and vanilla. Mix well for 3-4 minutes with an electric mixer until frothy

Add the milk and oil, mix, sift and add the flour with the baking powder and mix

Finally add the apples cut into thin slices

Pour half of the mixture into a rectangular mold (27×27 cm) lined with baking paper

Add a few spoonfuls of cream then cover with the rest of the mixture

Using a piping bag, place the pastry cream in a checkerboard pattern

Finally, bake the cake at 170°C for 40-45 minutes

Sprinkle with icing sugar and serve
