You gotta try this. No really. Even if you're a guy, or have zero experience you can make this.
4 apples. green or cooking apples preferred 4-6 eggs 1 lemon 1 1/2 C milk 1/2 - 2/3 C brown sugar 4 T sugar 3/4 t baking powder 1/3 t salt vanilla or almond extract 1 C flour |
Take a large cast iron frying pan. Squish up about 1/2 - 2/3 cup butter in the bottom. Just cover with brown sugar.
Peel, quarter, core and thiny slice 3 or 4 cooking apples. Spend some time on this and slice them as then as you can. Dump into a container with the juice of one lemon, swish them around.
Separate 4-6 eggs; beat the whites in one bowl. In another bowl beat the yolks till lemon yellow and add 1 1/2 C milk, 1/4 C melted butter, 4 T sugar, 3/4 t baking powder, 1/3 t salt and beat. Optional: one capful vanilla or almond extract.
Slowly add 1 C flour to the egg yolks mixture, a little at a time: add a little flour, beat it in, whisk, add more, which, until it's all added. Now fold in the beaten egg whites (or dump the yolk mixture into the beaten whites) whisk until mixed.
Ok this part is kinda picky. Place the apple slices carefully in a pattern, ie overlapping each other in concentric rings, so they don't take up too much space and fill up the pan. If you just dump them in in a haphazard manner there are to many gaps between the apples they need to be arranged. Sprinkle with a generous amount of cinnomin and a touch of powdered cloves. I also like to add powdered cardamom and ginger. About 1/2 to 1t of each. Add currants or sultanas to taste - not a lot. Dump the batter on top then stick it in the oven for 30-45 minutes at 350 until a toothpick stuck in the center comes out easily.
Let it sit for 15 minutes then run a knife around the outside of the thing in the pan. Put a plate on top, turn the whole mess over and it should flip out easily onto the plate.
