Carrot Avocado salad


1.5 lbs carrots
olive oil
1 Tspn Cumin Seed
S&P to taste
1/4 cup Lemon Juice, more to taste
cilantro OR flat parsley, rough chop
large Avocado

Heat oven to 425. Cut carrots to 1/2" matchsticks, toss with oil, cumin, S&P. Spread carrots & roast until tender, about 30min. Cool. Place cooled carrots in bowel with lemon juice & herbs. Peel, seed and dice the Avo. Toss with carrot mix. Chill completely.
