I had this one time at the Cliff House (?) at the base of Geary at Seal Rock in San Francisco a long time ago. I just made this up and tried it, and it's pretty close to my memory of the stuff. It's quite awesome on waffles. Ask me how I know.
- Two tablespoons of butter
- 1/2 t lemon zest
- Dash of vanilla
- 1.5 C 18% cream
- Thumb sized piece of ginger, peeled and grated
- Whole nutmeg
- 1 t sugar
- 1 tablespoon brandy
Melt butter in sauce pan on medium heat, add lemon zest and ginger, stir for 30 seconds. Add 1/3 of the cream, grate a good amount of nutmeg into it, add the sugar and vanilla. Turn heat up to high, stir constantly until cream reduces. Add another 1/3 of the cream and the brandy, reduce. Add the remaining cream, recuce until is reaches the consistency you want.
