Very finely chop half an onion, put in a bowl. Add the juice of half a lime. Roughly chop the cilantro and add it with a pinch of salt and freshly ground black pepper to taste. Finely chop the pickles and add with the mayo. Finely chop the turkey meat (optionally add a small amount of finely chipped sausage stuffing) and add to the bowl. Mix well and spread on bread.
