3 cups whole milk
1 cup heavy cream
1 whole vanilla bean or 2 teaspoons vanilla extract
8 large egg yolks
¾ cup sugar
Seperate eggs, place yolks in a heavy bowl. Reserve the whites for something elese - merangues?
Dump everything except the sugar into a saucean and scald.
While the milk is heating, beat the eggs yolks and sugae until lemon yellow.
When the milk is scalded, put a few drops of it in the yolks and whisk quickly.
Add more milk a but at a time until there's twice as much liquid as there was yollks.
Now you can add more milk at a time, still not all at once, but it larger amounts and while still whisking.
Retun the custand to the saucepan, keep in lowest heat and stit until thickened.
