From the Vaya site in India.

7 cups/2½ lbs firm green tomatoes (cored and chopped)
1 cup chopped red onion
1 cup cider vinegar
1 1/4 cup brown sugar
1 cup golden raisins
2 tbsp chopped candied ginger (murabba)
1 tsp red chilli flakes
1 tsp fennel seeds
1 tbsp mustard seeds
1 tsp salt
1/8 cloves (ground)
1/2 tsp ground pepper
1 cinnamon stick
A pinch of ground nutmeg
Add all the ingredients and 1 cup of water in a medium heavy bottomed pan and on a medium flame; bring to a boil.

Reduce the flame to a low and let it simmer for 45-50 minutes.

Remove from flame and fill chutney into sterilized jars.
