• 3 eggs
  • 9T white flour or 3 tablespoons coconut flour
  • 5 tablespoons butter, melted (1/6 cup)
  • pinch of salt
  • 1 teaspoon baking powder
  • lemon zest to taste
  • Melt the butter. Brown it. Add lemon zest.
  • Beat the eggs for a long time until very foamy
  • Combine flour, salt, baking powder and mix evenly
  • Add dry ingredients to the eggs, fold with a spatula
  • Add the butter, fold with a spatula
  • Chill in fridge for four (4) hours.
  • Spoon dough into a (greased, if not Teflon) madeline pan and cook for 12 minutes at 375F

  • Various flavors can be added, ie, lemon zest and poppy seeds, cocoa and vanilla, pumpkin spice and so on.

    1 tbsp coconut flour (or 2)
    1 tbsp almond flour
    1 tbsp coconut
    2 tbsp poppy seed
    1 tsp mace
    5 tbsp currants
    baking powder
